Trick Manicotti for Picky Eaters

If your child is anything like mine then he convinces himself based on a sideways look as to the merit of each morsel that is daring to enter his mouth. The greener it is, the more difficult the entry becomes. This recipe is a sure fire way for those picky boys and girls to enjoy the good food they need without ever knowing that they are.(at least until they are emotionally ready for the truth).While reading Pamela Druckerman’s Bringing up BebeI have discovered that by having these questionable items pass my child’s lips, he will eventually gain a palette for them and eventually eat them without question and finally enjoy them. I have seen this first hand as my previously grey food eating child is now reveling in cantaloupe, braised ribs, garlicky pork cutlets, green peas with red peppers, mineral water, lettuce, sour cream, mixed vegetable soup, zucchini fritters and yes trick manicotti.

Fillingblender

1 tub cottage cheese
2 whole eggs beaten
1/2 teaspoon nutmeg
2 cups spinach or spinach and baby kale finely chopped
(for picky kids fill a number of tubes with cheese filling only) Add spinach to mixture after
1/2 teaspoon salt
1 1/2 cups of grated mozzarella
1 box oven ready cannelloni/manicotti noodles

Method

Mix all the ingredients together and stuff in shells.

Healthy Trick Sauce

1 can crushed tomatoes
3 cloves garlic
1 cup spinach or spinach and baby kale finely chopped
1/2 cup olive oil
1/4 teaspoon of salt
1/4 cup of water

Method

  1. Put everything in blender; blend.
  2. Pour over stuffed tubes.
  3. Follow package instructions for baking your manicotti.
  4. This version will come out with the sauce baked right into the noodles. Kids never know that they are eating greenish sauce filled with antioxidants, vitamin A, C and K.
  5. Top with your child’s favorite sauce and cheese; mine favours white sauce.

White Sauce

2 tablespoons butter
1/2 tablespoon flour
1/2 a cup of Parmesan
1/2 cup of heavy cream or milk

Method

  1. Melt butter.
  2. Add flour and meld together .
  3. Add cream.
  4. Add Parmesan allow to melt while stirring.done
